Un Highland Park exemplaire. Il est évident que ce whisky est grandement influencé par le xérès, et c'est là un avantage indéniable. Environ les deux tiers du whisky ont été élevés en fûts de xérès, dont un bon nombre avaient déjà été utilisés à deux reprises. Le whisky tire profit d'une délicieuse base de caramel anglais, de fruits (citron, prune, bleuet) et de chocolat noir. Il continue à évoluer en bouche, avec des notes émergentes de bruyère, de nougat, de lavande, de tourbe et d'épices séchées (cannelle et muscade, notamment) pour équilibrer les notes plus douces. Le supplément d'alcool est aussi avantageux, car son caractère sec vient atténuer la douceur du whisky. Ce sont des whiskies comme celui-ci qui m'ont fait découvrir et adorer le whisky. Note - 94. 30 years ago, our master distiller decided to lay down the casks that would go on to become the heart of this exceptional whisky and over these three decades, the whisky maturing inside them has developed an outstanding balance, with a seductive sweetness and extremely delicate smoke. Treating this whisky with respect will reward you with breath taking results: characteristic fudge sweetness comes together with complex aromatic spices and dark chocolate orange. It has a drying finish, leaving a gentle smoky flavour and an incredibly lengthy finish.

A delicious foundation of toffee, fruit (lemon, plum, blueberries) and dark chocolate.
