Tasting note

Ginjo sake is made from rice with each grain having 40-50% of its outermost starch polished away, making it finer and more delicate. This producer goes above and beyond, actually exceeding the 50% requisite. The resulting sake offers soaring aromatics that are intense yet quite pretty, showing fresh coconut, parsnip, horseradish and rice pudding with a touch of lychee. It's got full body, an elegant mouthfeel and plenty of flavour. This is a style of sake meant to be sipped like fine wine. Serve it chilled. (Vintages panel, March 2017)
