Tasting note

Raspberry eau de vie is made by fermenting, distilling and then quickly bottling ripe raspberry juice. The rapid process helps retain the true fruit essence, albeit in a very dry form. The resulting spirit is a classic partner in recipes, but at this level, it is a more than worthy substitute for cognac or even whisky. Because it is not sweet, the fruit essence is elegant and very refined. It is best sipped after a meal either at room temperature, or given a slight chill.
