Tasting note

Winemaking at Cave Spring focuses primarily on white wines, most specifically Riesling. Sourced from the estate's oldest vines (more than 30 years of age), the Cave Spring CSV is one of the finest examples of Niagara Riesling. The 2015 is a perfumed and floral wine with notes of lemon pie and a fine, pure minerality. Crisp and fresh, this has great length and cellarability. Enjoy it tonight with veal or grilled pork, or follow its development for the next 10 years or more. (Vintages panel, Aug. 2016)

A remarkably complex nose of fresh, ripe blueberries and yellow plums alongside scents of crushed stone and honey; dry and full bodied, the palate shows a viscous feel and grapefruit character on the attack followed by a weighty, highly extracted mid-palate with chalky undertones and anise flavours; the finish is extremely long, brimming with flavours of yellow plum fruit and spiced honey.
