Tasting note
The Hope family, owners of Liberty School, helped transform the 'wild west' of Paso Robles into a wine lover's destination thanks to wines like this rich Cab with its black fruit flavours. A real crowd-pleaser with barbecued fare or a meat-lovers' pizza.
This dry and cherry-red coloured red showcases a complex nose releasing balsamic, woody, empyreumatic, spicy, floral and fruity scents. You will be charmed with this full-bodied wine revealing a broad texture, fleshy tannins and a long finish.
A fruit-driven wine offering upfront aromas of ripe red fruit followed by vibrant and rich berry flavours.
The aromatic complexity of this wine is very engaging; blackberry brambles, layered with dark cherry, chocolate and cassis combine in a way typical of Cabernet Sauvignon in its most pure expression. On the palate, initial softness amplifies into a warm, supple firmness. The flavors in the mouth clearly evoke the aromas found in the nose.
Liberty School Cabernet Sauvignon opens with aromas of black cherry, plum and violets, followed by subtle flavors of strawberry and allspice on the mid-palate. Firm yet supple tannins finish off this approachable, fruit-driven Cabernet Sauvignon, making it ideal for a variety of food pairings.
