Tasting note
Elegant and delicious Ripasso is made from Valpolicella, with grape skins from Amarone production added to the process to create a richer wine. Dark cherry, blueberry, mocha, earth and spice. A tasty treat with veal parmigiana, osso buco or beef fajitas.
This dry cherry-red coloured wine features medium balsamic, woody, empyreumatic, spicy and fruity scents and offers a broad texture as well as fleshy tannins.
Ripasso is a wine making technique that uses the spent 'Amarone' grapes (see Tommasi Amarone description) and Valpolicella to make a wine that combines the best qualities of the two. A concentrated and balanced taste of plums, raisins, and chocolate.
Rich and spicy, with hints of black pepper and hints of raisins. Full, very intense, spicy notes of ripe cherry. White and red meats and cheeses. Serving temperature 17° - 18° C.
Made from a high portion of Valpolicella's best grape variety, Corvina, and balanced by Rondinella and a bit of Corvinone, this wine has youthful flavours of pepper, spice, black cherry and a hint of dried fruits. Dry and mouth coating on the palate, this medium- to full-bodied wine has fresh acidity accompanied by fine grained tannins. Perfect partner for meat dishes and rich cheeses.
