Tasting note

Very interesting sparkling from the cooler Adelaide Hills region - salted dried herbs, stone and lemon, with nervy apricot pith, grapefruit and a round, orchard fruit palate. Stone and apple finish off this dry, crisp bubble. Score - 89. (Treve Ring, winealign.com, Sept. 21, 2014)

The bouquet offers a complex blend of fine citrus and strawberry fruit, with underlying biscotti characters balanced with yeast lees influence. The palate is elegant and creamy with intense strawberry characters derived from quality Pinot Noir. There is excellent line and length.

Tradional sparkling varieties Pinot Noir and Chardonnay produce the perfect balance of strawberry and citrus fruit, while an extended time on lees had added a yeast complexity and texture on the palate.
